Doraemon's Dorayaki

¬ Ingredients

For the anko:

200 gr azuki beans
150 gr sugar

For the pancakes:

4 eggs
140 gr sugar
2 tablespoons of honey
170 gr flour
1 teaspoon of baking powder
oil

¬ Instructions

Let's start by preparing the anko.

  1. Put the beans in a pot and rinse them. Then add enough water to cover them and bring the water to a boil over medium-high heat.
  2. Once boiling, drain the beans, return the beans to the same pot, cover them with water and cook them for 1 hour or 1 hour and half. Some of the water will evaporate, so add more water to keep the beans covered, as needed. Pick up a bean and mash it with your fingers. When it mashes easily, it‘s done.
  3. Drain the beans, mash them, add a pinch of salt and the sugar, while mashing and stirring.
  4. Put the beans on the stove and let the moisture evaporate over medium low heat, stirring constantly.

Now let’s prepare the pancakes.

  1. In a large bowl, combine the eggs, sugar and honey. Whisk well until the mixture becomes fluffy.
  2. Sift the flour and the baking powder into the bowl, while mixing until well combined.
  3. Put the bowl in the refrigerator to rest the batter for 15 minutes. After resting, add 1 or 2 tablespoons of water to adjust the consistency.
  4. Heat a large nonstick pan, add a little oil and use a paper towel to grease the entire pan and remove any excess oil.
  5. Using a large spoon, pour some mixture into the pan to make one pancake and cook it over medium low heat.
  6. When you see the surface of the batter starting to bubble, flip the pancake over and cook the other side.
  7. When done, transfer it to a plate and cover it with a damp towel to prevent it from drying out.
  8. Grease the pan between batches, as needed. Continue making the rest of the pancakes.

Now let’s assemble the Dorayaki by making sandwiches using two pancakes and a scoop of anko.
