Doraemon's Dorayaki

¬ Ingredients
For the anko:
200 gr azuki beans
150 gr sugar
For the pancakes:
4 eggs
140 gr sugar
2 tablespoons of honey
170 gr flour
1 teaspoon of baking powder

¬ Instructions
Let's start by preparing the anko.
- Put the beans in a pot and rinse them. Then add enough water to cover them and bring the water to a boil over medium-high heat.
- Once boiling, drain the beans, return the beans to the same pot, cover them with water and cook them for 1 hour or 1 hour and half. Some of the water will evaporate, so add more water to keep the beans covered, as needed. Pick up a bean and mash it with your fingers. When it mashes easily, it‘s done.
- Drain the beans, mash them, add a pinch of salt and the sugar, while mashing and stirring.
- Put the beans on the stove and let the moisture evaporate over medium low heat, stirring constantly.
Now let’s prepare the pancakes.
- In a large bowl, combine the eggs, sugar and honey. Whisk well until the mixture becomes fluffy.
- Sift the flour and the baking powder into the bowl, while mixing until well combined.
- Put the bowl in the refrigerator to rest the batter for 15 minutes. After resting, add 1 or 2 tablespoons of water to adjust the consistency.
- Heat a large nonstick pan, add a little oil and use a paper towel to grease the entire pan and remove any excess oil.
- Using a large spoon, pour some mixture into the pan to make one pancake and cook it over medium low heat.
- When you see the surface of the batter starting to bubble, flip the pancake over and cook the other side.
- When done, transfer it to a plate and cover it with a damp towel to prevent it from drying out.
- Grease the pan between batches, as needed. Continue making the rest of the pancakes.
Now let’s assemble the Dorayaki by making sandwiches using two pancakes and a scoop of anko.
